Those who apizzare truly, not trendy, gluten intolerant will be doing a happy dance. 

First thing–I used a bread machine and highly recommend them.  If you know how to do all the punching and rising, that’s good too.

1 and 3/4 c water (add spoon fulls to get dough right mix.

2 teaspoon walnut oil (any will work)

2 t salt

2 Table heavyy cream (if you still believe the fat free lie use 2t of dry milk

1 t sugar

Add in that order to bread machine

I mixed rice flour and smelt flour together to make up 4 and 1/2 cups poured on top of the liquid mix in the bread machine.

Last make a little indent area like a lake in the top of the flour but not down to the liquid.

1 teaspoon active dry yeast (pour into the lake)

Set the bread maker on dough mode. Plug in and watch the first mix-mode to see if you need to add more water. I use the spatula to pull flour into the ball of dough as I drizzle a little extra water.  Get on social media and visit or write a book until you hear a ding.  Pree-heat oven somewhere about this time.

or for those who don’t have a bread maker (I got my for $69 at WalMart.)

  1. Knead for 5 minutes
  2. Let rest for 5 minutes
  3. Knead for 20 minutes
  4. Let rise an hour

Pour a liberal amount of oil on pan

I used a spatula with oil and pushed the dough it into shape.  Works easily. Use liberal amount of oil on top and brush on if you have to .  The oil gives a great crispy effect.   Add your fav stuff toppings.  Mine are ground sun dried tomatoes, olives, pork browned with seasonings, (packaged sausage has sugar) cheese, tomato sauce made without sugar, ham (Boar’s Head Sweet Slice has no sugar).  I’m trying this four mix on bread tonight.
